– 6 sheets of phyllo dough;

– 3 pears;

– 2 tablespoons pine nuts;

– 2 tablespoons raisin which has already been soaked in water;

– 2 tablespoons hazelnuts roughly chopped;

– 2 tablespoons almonds roughly chopped;

– 3 dried figs finely cut;

– 3 dried apricots finely cut;

– 1 teaspoon cinnamon;

– 1/2 litre cinnamon-flavoured custard (prepared adding a teaspoon of cinnamon to the milk);

– 1 knob of butter;

– 100 gr. sugar;

– 2 tablespoons dark rum;

– 1 egg;

– icing sugar to taste;

– 6 tablespoons ice-cream with spices (prepared with ice-cream base and a teaspoon of spices such as pepper, cinnamon, bay leaf, nutmeg…)



Cut the pears into cubes and cook in a pan with butter for 4 minutes, add rum and 3 tablespoons of sugar, cinnamon, pine nuts, raisin, hazelnuts, almonds, dried figs, dried apricots. Blend and let rest for 5 minutes.

Spread out phyllo and fill with the pear mixture, roll to make cannolis. Put the cannolis on a baking pan, brush with the whisked egg and sprinkle some sugar on. Cook in hot oven for 12-15 minutes 180°. Serve the cannolis hot with a dusting of icing sugar and cinnamon, add the cinnamon-flavoured custard and the ice-cream with spices.
