This is our motto, this is why the courses of the restaurant “I Sette Consoli” represent the territory, they are deeply bound to local traditions and products, even if they revisit the tradition with refinement and quality. The best compliment we love to receive, is when someone applauds us for our constant quality. This is very important to us: we do not make an intellectual or innovative cuisine, our clients know what they will find and they will have to find a high quality each time they visit. Who visits us for the first time, should be willing to visit again because of this quality.
To make such a cuisine, we need of course excellent products. Exactly those we use and offer.
Our wine list includes 800 wines of any origin. We show a high regard to the local wines but also offer a big space to wines from all Italy, Europe and the whole world.
In “I Sette Consoli” you can choose among about 100 liquors: grappa, brandy, rum, cognac, calvados, armagnac, rare whiskey and liquors to end in the best way your lunch or dinner.

FINE CHEESE AND CIAMBELLA FROM MOROLO
Massimiliano is brilliant. Since the beginning he has focused on two aspects fundamental to him: the quality of the raw materials and the manufacturing technique. First of all, milk, which is exclusively selected from the stables of Ciociaria and which needs to fulfill the procedural guidelines. The same search for quality then takes to the choice of the other ingredients: natural veal rennet, whole sea salt, extra-virgin olive oil.
